Sweet sticky rice mango (Khao Niaow Ma Muang)

Sweet sticky rice
1 cup sticky rice or glutinous rice soaked for 4-6 hours
2/3 cup coconut milk
2 tbsp. palm sugar
2 pinches of salt

2 pandan leaves

1 tsp. corn starch
1 tbsp. roasted mung bean


  1. Drain the rice, and then steam over medium heat for about 20 minutes
  2. Put coconut milk, sugar, salt and pandan leaves in a pot, and heat over medium heat with gentle stirring to dissolve the sugar
  3. Remove the rice from the steamer and put it in a pan with ¾ of the coconut cream. Mix them well together, cover with a lid, and cook for 15 minutes
  4. Cook the remaining coconut cream with corn starch until it thickens. Set it aside as the topping
  5. Serve the rice with Mango (peeled, cut in chunks), topping with mung bean and the coconut cream topping
