Fried chicken with cashew nuts (Gai Pad Med Manuang)

Ingredients
50 g sliced chicken

2-3 cloves garlic – finely chopped

¼ cup onion, cut into small size pieces

¼ cup elephant ear mushroom – cut into bite size piece

50 g roasted cashew nuts

1 sliced red bell pepper

1 baby corn, cut into bite size pieces

1 carrot, cut into bite size pieces
2 spring onion stalks – cut into 1 inch long pieces

50 g roasted cashew nuts

5 fried dried Thai chilies

2 tbsp. cooking oil

Seasoning

¼ cup water

2 tsp. sugar

2 tsp. soy sauce

2 tsp. fish sauce

2 tsp. oyster sauce

1 tbsp. Thai chili paste

Instructions

  1. Mix the chicken and soy sauce and sear on one side until golden brown (approx. 30 seconds). Leave it set aside in a bowl
  2. Fry garlic and onion in oil over medium heat until garlic starts to turn brown, then add mushroom, red bell pepper, baby corn, carrot and the seared chicken
  3. Add all seasonings and turn up the heat. Cook with stirring until the chicken is done (not pink)
  4. Remove the heat, then add green onion, cashew nuts and fried dried chili. Mix well and serve
