Cooking sticky rice

Soak rice in water (2 to 3 inches above the level of the rice) for four hours, or overnight. The rice will absorb the water and expand. Drain and spread loosely on a plate or thin cloth. Place the plate on a steamer rack positioned over a steamer pot containing at least 1 1/2 inches of water. Steam the rice dry (without any additional water added) over medium heat for half an hour, or until the grains are translucent, and softened but chewy.

Cooking rice using a rice cooker

Measure the rice with a cup and put it into your cooking pot. Rinse the rice in order to remove contaminants and excess starch. Measure the water needed: how much water you add depends on what kind of rice you’re cooking and how moist you prefer it (normally I add 1 inch above the level of the rice). Close the lid, plug the cooker in, and press the switch to turn it on. When the rice is done the rice will be warm, and the cooker can be unplugged.
